Bay of Fundy oysters are raised in icy, phytoplankton-rich seawater that results their distinctive taste, attractive smooth shells, and irresistible texture. They are as fresh, clean, and natural as our ocean year-round.

The Bay of Fundy’s huge tides stir up a nutrient-rich phytoplankton buffet that nourishes our oysters. Thanks to our unique geology, rich ecosystem, and distinctive seasons, our oysters thrive in oxygen-rich waters brimming with essential nutrients, trace minerals like iron, zinc, and silica, B12s, and omega-3s. The result? Oysters as nutritious as they are delicious.

  • They sure are! Oysters are low in fat, high in protein and a rich source of key nutrients, including Vitamin D, copper, zinc, selenium, iron, and Vitamin B12.

  • Yes! Oysters are highly beneficial to their coastal ecosystems

  • There are three main ways oysters benefit their environment: 

    1. Water filtration: Oysters are filter feeders that help extract phytoplankton, organic particles, and sediment, resulting in clearer, cleaner waters. They can even help prevent harmful algal blooms!

    2. Carbon Sequestration: As oysters grow, they incorporate carbon from the water into their shells, which are made of calcium carbonate. The shells act as carbon sinks and help counteract acidification, which is good news for healthy seawater. 

    3. Nitrogen and Phosphorus Cycling: Oysters incorporate nitrogen and phosphorus from the water into their tissue, and excrete them as seafloor sediment. This helps remove harmful nutrients from the water column.

The Quoddy

Good things come to those who wait. The Quoddy, our premium large oyster, is a special treat that takes five to seven years to mature. This special treat from the sea is exceptionally meaty and plump, with a perfectly salty-sweet balance that’s delicious raw on the half shell, or in epic Oysters Rockefeller.
